There seems to be a fascination in story telling to make that next thing or perhaps discover what predated that story. We have seen that with the Star Wars movies, the Tolkein series of films and now with Game of Throne's Prequel series House of the Dragon.
I think people do this as to perhaps give context to what was before. Let us take Star Wars as an example
When that film came out, there wouldn't be any need for anything beyond it however the opening titles of "Episode 4: A New Hope" probably made people think, "I wonder what came before that?"
As I write this, A New Hope could potentially have been a stand alone film however people probably enjoyed it so much that they wanted more of that world.
Eventually the original trilogy finished (4,5, and 6) created the need for a mythos.
